Cut a cross
shape at the base of each tomato. Plunge the tomatoes in a bowl of
boiling water - this will make the skin easier to peel. After a few
minutes, pick up each tomato with a fork and peel away the skin. Chop
the tomato flesh and mix it with the tomato paste and olives.
Cut each off
the muffins in half to give eight thick pieces. Toast the muffin halves
under a hot grill for 2-3 minutes until they are golden. Mix the garlic,
butter and basil together and spread onto each muffin half. Top with the
tomato mixture. Mix the dressing ingredients and drizzle over each
muffin. Arrange the mozzarella cheese on top and season.
Return the
muffins to the grill for 1-2 minutes until the cheese melts and serve at
once, garnished with the fresh basil leaves. These delicious mini
pizzas, using muffins as a ready made base, can be prepared and cooked
in just half an hour. Use balsamic vinegar instead of the lemon juice
for an authentic Italian flavor.
