Method :
- Cream butter and sugar until light and
fluffy.
- Add eggs, one at a time, beating well
after each addition.
- Stir in the mashed banana, sour cream
and oil.
- Fold in flour and spice and pour
mixture into 2 greased 20cm bake pans.
- Bake at 180�C for 35 minutes or until
cooked when tested.
- Set aside and cool completely.
- To make icing: Beat extra butter,
sugar and milk together until creamy.
- Divide mixture in two, add yellow food
coloring to half and pink to the other; add coloring drop by drop until
desired intensity is achieved.
- The icing darkens slightly after an
hour on cake.
- Cover icings with plastic wrap until
ready to use.
- Cut seconds cake as shown below and
assemble.
- Cover top and sides of cake 1 with
yellow icing, sprinkle top of cake with coconut.
- Carefully position the top of the
clock against the top of cake 1, cover with pink icing.
- Cover each mouse with pink icing and
roll in hundreds and thousands.
- Make tail and whiskers out of
liquor-ice.
- Cut numerals out of liquorice.
- Decorate the rest of clock as desired.
