Stuffed Rambutans Recipes

small banana, chopped
rambutans
stoned dates, chopped
papaya, peeled, seeded and chopped
grated zest and juice 1 lime
strips lime zest, to decorate |
Method :

Mix banana with lime zest and juice
and set aside.

Slice top off rambutans, exposing tip
of stone.

Using a sharp, small bladed knife,
carefully slice down around stone, loosening flesh away from stone.

Peel away skin, and slice lengthways
through flesh at quarterly intervals.

Gently pull down flesh to expose stone
and carefully cut away stone.

The flesh should now resemble a four
petalled flower.

In a food processor or blender, blend
banana and dates until smooth.

Place a teaspoon of filling in the
centre of each rambutan and bring up sides to enclose filling.

Cover and chill for 30 minutes.

Blend papaya in a food processor or
blender until smooth, pass through a sieve and spoon onto 4 serving
plates.

Top with rambutans, decorate with
strips of lime zest and serve.
Serve 4
