Stone fruits, such
as peaches, nectarines and apricots, can be peeled with a sharp paring
knife, but this may waste some of the delicious flesh. The following
method removes the skin only.
Make a
tiny nick in the skin.
Cover
with boiling water and leave for 15-30 seconds, depending on the
ripeness of the fruit.
Remove
the fruit with a slotted spoon and peel off the skin, which should
come away easily.
