Traditional Rice Pudding Scented with Rosewater Recipes
Ingredients :
3 oz pudding rice
4 oz sugar
1/2 tsp ground nutmeg
1/4 tsp ground coriander
1/2 tsp salt
2 tbsp grated suet
1 pint milk
4 egg yolks, 1 egg white
4 tbsp fresh white breadcrumbs
2 tbsp rosewater
lemon peel slivers, to decorate (optional)
brown sugar, to serve
Method :
Combine rice, sugar, spices, salt,
suet and milk. Cook over low heat, stir, 30 minutes,
till the mixture is thick and creamy. Beat in the egg yolks and egg white,
the breadcrumbs and rosewater until thoroughly blended. Serve warm, sprinkled with brown sugar
and decorated with slivers of lemon peel, if using.
