Cherry and Nut Christmas Cake Recipes

self-raising flour, sifted
desiccated coconut
milk
chopped red glace cherries
chopped blanched almonds
chopped pecans
few drops almond essence
icing sugar, sifted
butter
hot water
lemon juice |
Method :
-
Preheat the oven to 160C, grease and
line a 23cm square cake tin.

Cream butter and sugar together until
light and fluffy.

Blend in almond essence, add eggs one
at a time, beat well after each addition.

Fold flour and coconut into creamed
mixture alternately with milk, finishing with flour.

Mix in cherries and nuts.

Pour into prepared tin and bake for
90-120 minutes or until cooked when tested, cool.

To prepare icing: combine all
ingredients well.

Mix to a stiff paste, adding more
water if required.

Spread icing over the entire cake.

Decorate as desired.
