Method :
- Oil serving plate lightly.
- Peel apples, remove cores and cut each
into 8 pieces.
- Lightly beat the egg and combine with
2 cup water and flour to make a smooth, thick batter.
- Heat the oil for deep frying.
- Mix sugar with 2 cup water and 1
tablespoon oil and bring to boil.
- Simmer until it forms a thick, light
colored toffee.
- Test if toffee is ready by dropping a
spoonful into iced water.
- If it hardens immediately the toffee
is ready.
- Add sesame seeds to the toffee and set
near the cooker.
- When the oil is almost at smoking
point coat several pieces of apple with the batter.
- Put into the oil and fry until golden
brown.
- Lift out using a pair of chop sticks
and put into the toffee mixture.
- When coated transfer to the iced water
to harden.
- Place on the oiled plate.
- Cook all the apple pieces and serve
immediately with the iced water.
- Dip into the iced water if the toffee
begins to soften.
