Snow Skin Coffee with Chocolate Bits Mooncake Recipe
Ingredients :
600g cooked glutinous rice
800g water
360g icing sugar
120g shortening
1 tsp Coffee Essence
Filling 1 (40g)
38g cheese
Filling 2 (80g)
80g lotus paste (mixed with 4g chocolate
beans)
Pastry skins (80g)
Method :
Filling
Blend filling 2
together: choclate beans with lotus paste and then roll it onto your palm
to form a fairly round shape. Then, roll filling 2 which is made of lotus
paste solely onto a round shape and then flattened it onto a small pancake
shape. Finally, place the rounded filling 1 onto the flattened filling 2
and wrapped it. Refrigerate the filling.
Snow Skin Coffee Pastry Skin
Mix in coffee flavoring or paste and water
onto flour. Then, blend well to ensure an overall consistency. Leave the
mixture for 10 minutes so it will harden enough for shaping later.
Next, sprinkle flour sparsely and blend in
with the coffee flavored mixture. It will become smooth and that is when
you cut them into rounded cubes. Finally, flatten the coffee pastry skin
into the size of your palm and it should weigh about 80g.
Putting it all together
Put in the filling that we have made
previously and covered the paste over the filling. Then, wrap the coffee
pastry well around the filling! Finally, put the whole mixture which is
round into the mooncake mould and you get your very own Snow Skin Coffee
with Chocolate Bits mooncake.
