Snow Skin Beans Delights with Mashed Yolk Mooncake Recipe
Ingredients :
600g cooked glutinous rice
800g water
360g icing sugar
120g shortening
1 salted egg yolk
1 tsp (colored) Pandan essence
For the Filling
60g Red bean paste
50g White bean paste
1 salted egg yolk
Pastry skin (80g)
Method :
Filling
Mashed egg yolk
and blend it well with about 50g of white bean paste to make up a total
weight of 60g. Then, simply roll in in onto a round shape with your palm
and then flatten it.
Next, take the remaining 60g of Red bean
paste and similarly roll it and flatten it. Both fillings should look a
little like small pan cake. Finally, combine both fillings together and
lightly pressed them together and now you have two flavors of filling
combined together!
Pandan flavor Snow Skin
Mix in pandan flavoring and water onto
flour. Then, blend well to ensure an overall consistency. Leave the
mixture for 10 minutes so it will harden enough for shaping later.
Next, sprinkle flour sparsely and blend it
with the original mixture. It will become smooth and that is when you cut
it into rounded cubes. Finally, flatten the pandan paste into the size of
your palm and it should weigh about 80g.
Putting it together
Put in the filling that we have made
previously and covered the paste over the filling. Then, wrap the pandan
paste well around the filling. Finally, put the whole mixture which is
round into the mooncake mould and viola!
