Remove
dirt and bad beans from the red beans. Wash and soak in water for 3
hours (soaking water should be 2 inches above the red beans). Wash lotus
seeds and soak for a while.
Heat half
pot of water. Add sago and cook for 5 minutes. Stir with ladle and
cover with lid for 30 minutes (repeat this step three times). Pour
sago into a strainer. Rinse with cold boiled water until the sago is
cool.
Remove
stalks from ginkgoes. Cook in hot boiling water for 10 minutes.
Bring 8
cups or suitable amount of water to the boil. Add red beans, soaking
water and lotus seeds. Cook for a while. Then turn to low heat. Cook
until red beans become tender. Add ginkgoes and sugar. Cook until
sugar dissolves. Then add sago and bring the ingredients to the
boil. Serve.
