Mooncake with Egg Yolk and Lotus Seed Mash Recipes
Ingredients :
300g plain flour
48g lotus seed mash
10 salted egg yolks
196g syrup
7 tbsp peanut oil
1 tbsp pu'er tea
1/2 tsp lye
Egg Liquid
2 egg yolks
1 tsp sugar
2 tsp water
Method :
Mix pu'er
tea with lye.
Wrap
salted egg yolks with greased tin foil. Bake in oven for 20 minutes
at medium heat.
Divide
lotus seed mash into 10 portions. Make a hollow in the center of
each lotus seed mash portion. Put in an egg yolk. Shape into a ball.
Set aside.
Sift
plain flour.
Add syrup
and oil. Knead into dough. Cover with wet cloth for 4 hours. Divide
into 10 portions. Wrap each ball with one portion of dough. Put into
the cake mould. Press flat. Take it out. Arrange on greased baking
tray.
Pre-heat
the oven for 15 minutes at 200C. Put in cake and bake for 15
minutes. Then turn to 180C and bake for 5 minutes. Take out and
sprinkle with a little water. Then bake for 5 more minutes. Brush
with egg liquid and bake for 10 minutes until golden. Serve.
