In a mixing bowl, sieve the flour and
bicarbonate of soda.
Run in the fat, add in the water
gradually.
Knead the mixture into a soft dough
and divide it equally into 2 portions.
Knead each portion separately and
divide into approximately 20 portions.
Form each portion into rounds and
flatten with a rolling pin.
Place one round on another and roll
once more.
This should result in rounds each
formed by two pieces of dough.
Fill each round with about 2
tablespoons of lotus seed paste and roll into a ball.
Using the sharp tip of a knife, cut a
criss cross pattern at the top of each ball to form an open petal shape
but be careful not to cut into the filling.
Deep fry the dumplings until brown,
drain and sprinkle each dumpling with sugar while hot.
