Method :
- Wash glutinous rice.
- Soak in water overnight.
- Drain and steam over high heat for
1/2 hour.
- Pour it into a deep bowl and mix
with seasoning.
- Place a sheet of cling wrap in
another deep bowl.
- Put half of the glutinous rice on
it.
- Add a layer of red bean paste.
- Place the remaining half of
glutinous rice on top.
- Cover with another sheet of cling
wrap.
- Unmould it by putting the bowl
upside down over a plate.
- Sprinkle with Qi Zi, raisin and
dried apricot on top.
- Steam over medium heat for 15
minutes.
- Keep warm.
- Bring syrup to the boil.
- Add the thickening glaze and bring
to the boil.
- Pour it over the steamed rice.
- Sprinkle dried osmanthus blossoms
on top.
- Serve hot.
Refrigerated cooked glutinous rice
takes longer to steam. Or else, you might have hard lumps in the rice.
This dish has to be served hot.
