Soak
bird's nest in water for 5 hours or overnight. Remove the dirt, wash
and drain. Transfer to the stewing pot, add boiling water and stew
for 1 hour.
Wash
sweet and bitter almonds, soak for 1 hour and drain. Blend in
processor with 2 cups of water until they are ground to the very
fine consistency. Remove the residue to form almond juice.
Transfer
almond juice to the cooking pot, add granulated sugar and stir
constantly until it boils and sugar melts. Combine with bird's nest
and bring to the boil.
