Heat oven to
375F (190C). Grease large cookie sheets. Combine honey, peanut butter,
shortening, eggs and vanilla in a large bowl and beat until blended and
fluffy. Stir in dates, rolled oats, wheat germ and walnuts. Sift flour,
baking powder, salt, cinnamon and nutmeg together into first mixture and
stir to blend. Drop by rounded teaspoonfuls on cookie sheets. Cut more
dates in half lengthwise and top each cookie with half an date or flatten
cookies with the tines of a fork. Bake 18-20 minutes.
